trocnodoml GPU Gems 2, released in March 2005, contains twenty chapters related to GPGPU.

Part 4 of the book is an eight-chapter introduction to GPGPU. Those new to GPGPU will find it particularly enlightening. Part 5 covers techniques related to GPGPU image creation and analysis (basically, rendering and image processing on the GPU using techniques that are not traditionally GPU-based). Part 6 includes algorithms for non-graphics GPGPU: simulation and numerical methods.
